I have another confession to make, one of my favorite things in the world is fried chicken. Of course we all know how terrible it is for you since its deep fried chicken but I have come up with a recipe that will never make you miss “the real” fried chicken again. This recipe was so good I had it for breakfast the next day.  I know what you are guys are thinking I’m a little gross, but it really was delicious. Well in order to recreate a healthy fried chicken I think there are two things you need to do. You need to leave the bone in the chicken and you need to make sure you season the chicken very well. Leaving the bone in the chicken really makes you feel like you are eating a piece of fried chicken and it really keeps the chicken moist.

Oven Baked Fried Chicken (6 pieces)

2 cups crushed Special K cereal (or any plain corn cereal you have)
1/4 cup parmesan cheese
2 teaspoons dried oregano
2 teaspoons dried parsley
2 egg whites
2 tablespoons dijon mustard
1/2 cup fat free yogurt
3 cloves of garlic, minced
Paprika
Salt
Pepper
6 pieces skinless bone in chicken pieces
Cooking Spray

Preheat oven to 375 degrees.

Combine cereal, oregano, parsleya nd parmesan cheese in one bowl. Mix all ingredients together.

Combine egg whites, mustard and yogurt in one bowl. Mix all ingredients together.

Season chicken pieces with salt, pepper, paprika, and garlic. Make sure to liberally season each piece of chicken with these spices because they really add alot of flavor. After chicken pieces are seasoned dip them in the yogurt mixture and then dip into cereal mixture. Place on a baking sheet sprayed with cooking spray. Bake for 30-45 minutes depending on size of chicken piece. Drumsticks and wings take about 30 minutes. Thighs take 35-40 minutes. Chicken breasts take about 45-50 minutes.
