chicken parm without the harm

So my husband has always loved chicken parmesan, but I have always stayed away from making it at home because of all the calories and fat that come with it. Between having to dip the chicken in eggs, frying it, and then covering it in cheese it made for a pretty unhealthy chicken dish. However, today I made a rather healthy chicken parmesan that utilizes whole wheat flour, egg whites, and low fat mozzarella cheese (and of course no butter or oil in the whole recipe)! Hope you like it! Joey seemed to love it, since he couldn’t stop eating it :)

Chicken Parmesan (4 servings)

4 6 oz chicken breasts pounded to a 1/2 inch thickness
Jarred marinara sauce (preferably tomato basil marinara)
4 slices of low fat mozzarella cheese
Whole wheat flour for dredging
2 egg whites
1 TS of water
Italian seasoned bread crumbs
1 ts dried basil
Cooking spray
Salt
Pepper

Preheat oven to 375 degrees.

Add 1 tablespoon of water to the egg whites. Then beat with a fork until egg whites are frothy. Set up an assembly line for the whole wheat flour, egg whites and Italian seasoned bread crumbs.amy's bachelorette party 043

Pound each chicken breast to a 1/2 inch thickness. Sprinkle both sides of chicken with salt and pepper.  Dredge chicken in whole wheat flour, then dip in egg whites, and then coat in bread crumbs. Place chicken breasts on a wire rack sprayed with cooking spray. Bake chicken for 15 minutes until cooked through. Broil for 2-3 minutes to give chicken breasts a good color.

In a glass baking dish spread marinara sauce along the bottom. Place chicken breasts atop marina sauce. Spread another thin layer of marinara sauce atop chicken breasts. Place one slice of low fat mozzarella cheese on top of each chicken breast. Sprinkle with dried basil. Place in oven for another 15 minutes until cheese is bubbly and hot. Take out of oven and serve!

    So, to follow up on my comment earlier, the reason I liked this chicken parm so much was that, since it wasn’t greasy at all, you could really taste the chicken, sauce, and cheese. It was a totally new chicken parm experience! And I didn’t feel full and nasty, like I usually do after chicken parm, which was a pleasant surprise. This really was one of the best chicken parms, I’ve ever had!
