tasty, healthy, fast, chicken fajitas

As I mentioned in my previous post it can be hard to put a healthy, tasty meal on the table in a short amount of time. Well one of my favorite recipes when I am in a rush is  chicken fajitas because everything can be made in 20 minutes.  Chicken fajitas are packed with a good source of lean protein and a diverse set of vitamins from the peppers, onions and guacamole. What I love even more about these fajitas is that they satisfy my junk food craving even though I am eating something truly good for me!

Chicken Fajitas (makes 6 soft tacos)

12 ounces chicken breasts cut into strips

7 ounces of frozen sliced peppers

1/2 an onion sliced

1 1/2 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon salt

1 garlic clove minced

1 teaspoon of olive oil

6 96% flour tortillas

Place the sliced chicken breast in a bowl. Place the frozen peppers and onions in a ziploc bag. Mix the chili powder, cumin and salt together. Mix half the seasoning mix with the chicken and mix the other half of the seasoning mix with the onions and peppers. Add a 1/2 teaspoon of olive oil to a pan and once the oil is hot add the vegetables and cook until the onions are lightly browned. Add a 1/2 teaspoon of olive oil to another pan and cook the chicken. Once the chicken and vegetables are cooked place in a dish and cover with foil. Warm the tortillas by placing one tortilla in a pan and flipping the tortilla once it is warm.


Chopped tomatoes

Low fat shredded cheese

Fat free sour cream sprinkled with chili powder

Guacamole Recipe

One ripe avocado

1/2 a chopped garlic clove

Juice of 1/2 a lemon

1/4 teaspoon salt

1/4 teaspoon chili powder

Mix all ingredients together and serve.

    Joe asked me if I had read and liked your blog . . . I did and do!
    Have you ever tried the Just Chicken at TJ’s? It’s really good (and convenient) and you can use it in a lot of recipes. It would work in this one. My son works part time at TJ’s; I give him a shopping list at least 1x a week, so I have my own personal shopper!
    P.S. thanks again (if Joe didn’t tell you) for the coin purse from Italy! I really liked it and it was very thoughtful of both of you to think of me.

    I am glad you like the website! It’s kind of a work in process but hopefully people will come to like it and go on it regularly. I def. always buy that chicken from Trader Joe’s and love it so that would have been a good short cut to mention. I’ll mention it in my next post!
