zippy shrimp tacos!

I know I have been MIA for a while but life got kinda crazy for a while–between starting a new job right and dealing with all the craziness that comes with the holidays, I didn’t have that much time to blog. But life, has hopefully settled down once again and I should be back to regularly blogging.
To end 2009 with a bang, I decided my last blog entry of the year should end with some spice–zippy shrimp tacos! These shrimp tacos have just the right amount of heat to light up all the taste buds in your mouth.
Shrimp Marinade
1 pound shrimp, peeled with tails removed and butterflied 11/2 teaspoons chili powder 1 teaspoon paprika Pinch of cayenne pepper (if you like it spicier, feel free to add more)Juice of 1 lemon 3/4 teaspoon minced garlic 1 teaspoon olive oil

Mix all the ingredients together. Let it sit in the refrigerator for 1-2 hours (if possible) to marinade. Add the shrimp to a hot pan ans saute for 7-9 minutes until the shrimp are cooked through. Serve with warm tortillas, cheese, and the garnishes below!
Garnishes:
Corn Salsa
1 can whole kernel corn 1/2 an avocado cut into small cubes1 tomato diced 1/4 cup diced red onion juice of 1/2 a lemon 1/2 teaspoon salt 1/4 teaspoon ground black pepper

Combine all the ingredients together. Let it rest in the refrigerator for at least 1 hour to let the flavors marinate and then it is ready to serve.
Guacamole
1 ripe avocado Juice of 1/2 a lemon 3/4 teaspoon salt 1/2 teaspoon minced garlicMash the avocado. Add in the lemon juice, salt and garlic. Mix all ingredients together until all ingredients are combined.
Spiced Sour Cream
1/2 cup sour cream 11/2 teaspoons chili powder 1 scallion chopped 1/4 teaspoon saltMix all the ingredients together and serve.



try adding cumin to the sour cream. with the chili powder, it’s perfect with mexican food.
