Well, I guess I took about a month-long blogging hiatus.  It wasn't intentional, but I guess I've been getting adjusted to living somewhere new, cooking in a different kitchen, and of course...working.  But now that a month has passed, and Superbowl Sunday is around the corner, I decided it was time to get "back in the game" before the big game! The other night we went to our friends' house for dinner who were vegetarians. I know Tali is a great vegetarian cook since she is a vegetarian, but sometimes I still find it challenging to come up with a good hearty vegetarian meal if I don't consult Tali first. I love love love pumpkin pie, but since it isn't thanksgiving yet, I thought that a pumpkin swirl cheesecake would be more appropriate.  It's so easy to make thanks to the prepared graham cracker crust I used (I keep finding great ones - only 100 calories per serving in this one and no bizarre artificial ingredients) - using a prepared crust saves so much time!   This is much lighter than regular cheesecake, and you get protein from the tofu and vitamin A from the pumpkin.  Also, don't tell anyone that there's tofu in this - you really won't taste it!  I think this is my favorite dessert I've made in a long time - it's sweet and yummy but… continue reading pumpkin swirl cheesecake. | 10 Comments

HAVE TO eat cheesecake?!

One of my favorite Jewish holidays, Shavuot, just passed.  It's always been my favorite holiday because you're supposed to eat dairy foods (...why is it that my favorite things always revolve around food??).  I guess technically, there's no actual requirement to eat cheesecake on this holiday, but it's one of those traditions that I love and just HAVE TO follow...wouldn't want to break with tradition!! I don't eat cheesecake that often, so I guess it wouldn't be a big deal to just eat a slice (sometimes you just want the real deal) and feel gross later (and probably force myself to "diet" for a few days trying to make up for it).  Did you know that your average slice of cheesecake can contain about
